Creamy Beef Tomato Soup with Pasta

Why We Love Beef Tomato Soup

It’s customizable. We used shells as our pasta of choice, but you could use macaroni, rotini, or penne if you prefer.

•  Olive oil •  Yellow onion •  Ground beef •  Garlic •  Salt and pepper •  Low sodium beef broth •  Crushed tomatoes •  Diced tomatoes with juice •  Oregano •  Dried basil •  Dried parsley •  Medium shells •  Cream cheese

Ingredients

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, and saute for 3-4 minutes, or until just starting to soften.

Step 1

Stir in the garlic and saute until fragrant, about 30 seconds. Season the beef to taste with salt and pepper.

Step 2

Stir in a little broth, and use it to deglaze the pan, scraping up any browned bits from the bottom of the pan.
