Creamy Beef Tomato Soup

This easy soup recipe is very family friendly and a great 30 minute meal for busy weeknights.

-  Olive oil -  Yellow onion -  Ground beef -  Garlic -  Salt and pepper -  Low sodium beef broth -  Crushed tomatoes -  Diced tomatoes with juice -  Oregano -  Dried basil -  Dried parsley

Ingredients

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, and saute for 3-4 minutes, or until just starting to soften.

Step 1

Stir in the garlic and saute until fragrant, about 30 seconds. Season the beef to taste with salt and pepper.

Step 2

Stir in a little broth, and use it to deglaze the pan, scraping up any browned bits from the bottom of the pan.
