Cowboy Baked Beans with Ground Beef

This hearty dish is packed with BBQ ground beef, veggies, and beans. Sturdy enough for a main course, but it's perfect as a potluck side dish.

Ingredients
 

  • ½ pound bacon (cut into ½” wide strips)
  • ½ cup sweet onion (diced)
  • ½ cup green pepper (diced)
  • 1 clove garlic (minced)
  • 1 pound ground beef
  • 1 28 oz can baked beans
  • 1 15 oz can black beans (drained)
  • 1 15 oz can kidney beans (drained)
  • ½ cup barbecue sauce
  • 2 Tablespoons brown sugar
  • ½ teaspoon mustard powder
  • 3 Tablespoons apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes
  • ½ teaspoon black pepper

Instructions

  • Cook the bacon strips in a large non-stick skillet over medium low heat until crispy. Remove the bacon to a plate, leaving the bacon grease behind.
  • Add the onions and green peppers to the bacon grease. Cook over medium heat for about 5 minutes, until the onions are translucent. Remove the onions and peppers, combine them with the bacon. Pour off any excess bacon grease.
  • Add ground beef to the skillet and brown over medium heat. Once the ground beef is browned, pour off excess fat.
  • Add the garlic to the beef and cook for 1 minute.
  • Add the bacon, onions and green peppers, baked beans and sauce to the pan with the ground beef. Then add the drained black beans and kidney beans.
  • Then add in the remaining ingredients: barbecue sauce, brown sugar, mustard powder, vinegar, salt, red pepper and black pepper. Stir everything together.
  • Cover and reduce the heat to medium low. Cook for 30 minutes, stirring occasionally.

Notes

Substitute ketchup for BBQ sauce for a less sweet option.
This would make a great crock pot dish. Once all of the ingredients are combined, simply add to your crock pot and cook on low heat for 4 hours.
We ate this as a main dish served with a side of cornbread. It also makes the perfect side for burgers and hot dogs, including Air Fryer Burgers or Ranch Burgers. Perfect for a potluck or cookout.
