Keto Stuffed Peppers

Hearty ground beef, cauliflower rice, and cheese combine to make our quick and filling Keto Stuffed Peppers.

Bell peppers are a colorful and mild veggie that can add just the right pop of sweet and sharp flavor to just about anything.

- Bell peppers - Ground beef - Fire roasted tomatoes - Cauliflower rice - Shredded cheese


Preheat the oven to 375 degrees. Spray a 9x13 baking dish with nonstick spray.

Step 1

Cut peppers in half lengthwise, remove seeds, and place in the baking dish, cut side up.

Step 2

Cook the ground beef in a nonstick skillet over medium heat until brown. Drain meat and set aside.

Step 3

Place the skillet back on medium heat. Add the olive oil and onion. Cook onions until tender.

Step 4

Add the tomatoes, Italian seasoning, salt, pepper and red pepper flakes. Simmer for about 3 minutes until the tomatoes are warmed.

Step 5

Add the cooked meat and cauliflower rice. Stir together. Cook another 2-3 minutes until warmed through.

Step 6

Remove the pan from the heat. Add half of the cheese. Stir together until the cheese melts.

Step 7

Divide the filling into the cut pepper halves. Top with the remaining cheese.

Step 8

Spray a sheet of aluminum foil and place it over the stuffed peppers. This will keep the cheese from sticking to the foil.

Step 9

Bake for 30 minutes, then remove the foil and bake another 15 minutes or until the peppers are fork tender.
