Everything You Love About Lasagna in a Soup!

Lasagna is a classic in our household. There’s nothing like a comforting, hearty piece of our Cottage Cheese Lasagna, but it's a bit of a time commitment. When I'm craving lasagna and FAST, I turn to this Easy Lasagna Soup.
Here’s why we love this recipe so much:
- It’s made in one pot. We are BIG fans of the one pot meal (Have you tried our One Pot Taco Spaghetti yet?). No need to dirty multiple dishes, just grab one big pot and you're good to go!
- It only takes 30 minutes. There’s nothing like a simple meal that you can throw together and get on the dinner table quickly.
- You only need simple ingredients. You probably have most, if not all, that you need to make this already on hand. Speaking of ingredients…
Key Ingredients for Easy Lasagna Soup
- Ground beef. You only need a pound for this soup. This is a great way to stretch a pound of ground beef! It goes a long way. You can also add ½ lb Italian sausage for additional flavor and meatiness.
- Tomatoes. For this soup, you’ll need both crushed tomatoes and diced tomatoes. Make sure you keep the juice from the diced tomatoes.
- Beef broth. This is what turns the lasagna into a soup! We usually use low sodium beef broth, but any kind can work.
- Herbs. Oregano, basil, and parsley. The holy trinity of Italian food.
- Lasagna noodles. Break these into 1-2 inch pieces for your soup. You can also use sub other pasta shapes you have on hand.
- Cottage cheese. You don’t really taste the cottage cheese, I PROMISE. It just adds a wonderful, rich creaminess.
- Parmesan and Mozzarella. You can top your soup with either of these cheeses, or, my personal favorite, a combo of both!
How to Make Our Creamy Lasagna Soup
- Saute onion and beef. Heat the oil in a large Dutch oven over medium heat. Add the onion and saute until just starting to soften, about 3 minutes. Add the ground beef and continue to saute until no pink remains.
- Add garlic. Stir in the garlic and saute 1 minute, or until fragrant. Season with salt and pepper.
- Add liquids and seasonings. Stir in the tomatoes, beef broth, oregano, basil, and parsley. Turn up the heat and bring the mixture to a boil.
- Stir in noodles. Add the noodles, stirring to incorporate them with the liquids. Cook for 10-12 minutes, stirring occasionally, until noodles are al dente.
- Stir in cottage cheese. Turn the heat off, then stir in the cottage cheese.
- Serve. Ladle into bowls and sprinkle with shredded Parmesan and mozzarella cheese.
Tips & FAQs
Substitutions
- Add a ½ lb. of Italian sausage along with the ground beef for added flavor.
- If cottage cheese is an absolute no-go in your house, substitute ricotta.
- Other kinds of pasta that work well for lasagna soup are riccia, which looks like skinny lasagna noodles, cavatappi, gemelli, or rotini.
- You can substitute fresh herbs for dried if you prefer. Use double the amount of fresh herbs as dried.
How to make Lasagna Soup thicker or soupier
I've given a range of the amount of noodles to use depending on how thick or thin you'd like the soup. I like using about 10 lasagna noodles. For a thicker soup, use 12.
Storage and Freezing
- Storage: Leftover lasagna soup will keep in the fridge for about 5 days. Reheat in the microwave.
- Freezer instructions: The soup can be frozen before adding the noodles and cottage cheese. Follow the directions up to step 4, then cool completely, and freeze in a freezer safe container for up to 6 months. Thaw overnight in the fridge, then reheat on the stove top, adding the noodles once it's boiling.

One Pot Lasagna Soup Recipe
Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion (chopped)
- 1 lb. ground beef
- 4 cloves garlic (minced)
- Salt and pepper
- 28 oz can crushed tomatoes
- 14 oz can diced tomatoes with juice
- 5 cups low sodium beef broth
