One Pot Lasagna Soup

-  Olive oil -  Yellow onion -  Ground beef -  Garlic -  Salt and pepper -  Crushed tomatoes -  Diced tomatoes with juice -  Low sodium beef broth -  Oregano -  Dried basil

Ingredients

Saute onion and beef. Heat the oil in a large Dutch oven over medium heat. Add the onion and saute until just starting to soften, about 3 minutes.

Step 1

Add garlic. Stir in the garlic and saute 1 minute, or until fragrant. Season with salt and pepper.

Step 2

Add liquids and seasonings. Stir in the tomatoes, beef broth, oregano, basil, and parsley. Turn up the heat and bring the mixture to a boil.
