One Pot Lasagna Soup Recipe

Ingredients
 

  • 1 tablespoon olive oil
  • 1 medium yellow onion (chopped)
  • 1 lb. ground beef
  • 4 cloves garlic (minced)
  • Salt and pepper
  • 28 oz can crushed tomatoes
  • 14 oz can diced tomatoes with juice
  • 5 cups low sodium beef broth
  • 1 ½ teaspoons oregano
  • 1 teaspoon dried basil
  • 1 Tablespoon dried parsley or 3 Tablespoons fresh
  • 10-12 lasagna noodles (broken into 1-2 inch pieces)
  • 16 oz (2 cups) small curd cottage cheese
  • Shredded Parmesan and mozzarella cheese (for serving)

Instructions

  • Saute onion and beef. Heat the oil in a large Dutch oven over medium heat. Add the onion and saute until just starting to soften, about 3 minutes. Add the ground beef and continue to saute until no pink remains.
  • Add garlic. Stir in the garlic and saute 1 minute, or until fragrant. Season with salt and pepper. Drain off any excess fat, then return the skillet to heat.
  • Add liquids and seasonings. Stir in the tomatoes, beef broth, oregano, basil, and parsley. Turn up the heat and bring the mixture to a boil.
  • Stir in noodles. Add the noodles, stirring to incorporate them with the liquids. Cook for 10-12 minutes, stirring occasionally, until noodles are al dente.
  • Stir in cottage cheese. Turn the heat off, then stir in the cottage cheese.
  • Serve. Ladle into bowls and sprinkle with shredded Parmesan and mozzarella cheese.

Notes

  • You can add ½ lb Italian sausage for additional flavor and meatiness.
  • This recipe is based off our very popular Cottage Cheese Lasagna recipe.
  • You don’t really taste the cottage cheese, it just gives a great creamy texture.
  • Use less noodles for a soupier texture and more noodles for a thicker stew.
  • Feel free to substitute the lasagna noodles with 8 ounces of your favorite short pasta, such as campanelle, fusili, cavatappi, or rotini.
